Welcome Weight Loss Nation! It's Concoction Friday and since we talked about watermelon in Tuesday's episode, I knew it was time for a refreshing watermelon recipe! Watermelon Cucumber Salad This is very a light, fresh and cool salad that can be enjoyed anytime and with any meal or just as a nice in between meal snack. Ingredients 1/4 cup rice vinegar (NOT seasoned) 2 T chopped fresh cilantro 1/4 t crushed red pepper 2 c cubed seedless watermelon 2 c cucumber halved and sliced into moon shapes 1/4 c thinly sliced red onion Instructions Mix first four ingredients and set aside. Cut fruit and vegetables and mix together with first four ingredients then chill and enjoy. Yield: yields 4 servings Preparation Time: 15 minutes Nutritional Benefit 2 Cups Cucumbers = 30 calories Protein – 1.4 gms Fiber – 1.7 gms Sugar – 3.25gm Carbs – 5.1 gms 2 Cups of Watermelon = 92 Calories Carbs – 23g Sugar- 19g Protein- 1.8g Fiber - 1.2g Fat - 0 Red Onion = 20 calories Onions have “quercetin,” which is a bioflavonoid that “eats up” Free Radical Cells in your body. Free Radical Cells are known to cause Cancer. Red Onions have “Allicin” is a health promoting compound when chopped, promotes “Heart Health,” reduces Blood Pressure, and has been known to help people with “Dandruff,” due to it’s “Anti-Fungal” Agents. Rice Vinegar = 15 calories 0 Fat, 0 Protein, .01 gram of carbs The mild acidic taste yields little calories and a punch of flavor to your salads.
