Michael Romano is the Director of Culinary Development for Union Square Events, and a partner at Union Square Hospitality Group. Today he is brought on the show to talk about his latest book, Favorite Staff Meals from Our Restaurants to Your Home. In his book, Michael takes us behind the scenes to share with us the food that the chefs make for one another before they cook for you. This atmosphere is considered the “family meal,” a simple, often improvised dish to please the chefs’ discerning plates. Mr. Romano also talks about the simple traditions in Japanese culture, and how he brings these ideas and philosophies to his restaurants.
