Doughnuts are simple to make, really, and are so much better than ones you buy from the shops. Ii is a long process but the steps themselves are quick.
Makes 8 - 10
300 g Strong Bread flour sieved with 1/2 to 3/4 teaspoon salt
Stir in 40 g soft brown sugar
Stir in a sachet of fast action yeast
In a jug this together 2 eggs, 80 ml water, and EITHER the zest of a lemon or a teaspoon of vanilla.
Add 50 ml sunflower oil.
Make a well in the flour and pour in all the mixed liquids and flour your hands and mix.
Place on one side for 20 minutes.
You need 2 largish baking sheets.
Knead the Dough for 10 minutes with floured hands.
Place in a warm place for 40 minutes to prove.
Cut into the size of doughnuts you need and place on a baking sheet on baking paper and leave them again for 40 minutes.
Put oil in your pan, about 5 inches deep.
Heat it until it is very hot.
Flour your hands again to help pick up the Doughnuts.
Fry 3 - 4 at a time. After 90 seconds they will be browning and then turn over and repeat.
Have a baking sheet with kitchen paper on, and place the doughnuts on the sugar, covering all.
In the podcast it says use icing sugar too.
You can finish off in a hot oven, 200ºC, 400ºF, Gas 6 and this will also make sure the very centre is cooked fully. |
