Spiced Chicken Skewers
Spiced Chicken Skewers are simply a taste of the Middle East, and the longer you marinate them the more the flavour develops.
Ingredients
500 g chicken breasts
1 teaspoon each of:
Cumin, paprikaa, dried parsley
3 garlic cloves, grated
1/2 teaspoon chilli powder
1 tablespoon sunflower oil
3 tablespoons white wine vinegar
2 tablespoons clear honey
Pinch of salt and pepper
Mix all these ingredients in a large bowl
Cut the chicken into 3 cm chunks
Place the chicken in the mixer and massage in for 5 minutes
Chill for at least an hour
Thread onto skewers (you can add vegetables if you like)
Grill on high heat for 15 minutes, turning to avoid excess burning
Roasted courgette salad
2 large courgettes
1 small red onion
3 tablespoons oil
Pinch of salt
A bag of mixed baby leaves - or really why not pick your own
10 cherry tomatoes, halved
Cut the courgettes and onion fairly roughly and coat in the oil, springle with salt and road in an oven at 190ºC, 375ºF, Gas 5 for 25 minutes
Leave them to cool slightly
Mix with the leaves and tomatoes, add a dressing of your choice |
