Pork and Sausage and Vegetable Casserole
This is an almost everything in the fridge casserole for when you are in need of an inexpens meal.
Ingredients
500 g pork
5 Large sausages
! Red onion
1White onion
3 - 5 cloves of garlic
3 capsicums
1 Aubergine
1 tsp parsley
500 ml passata
Chop the vegetables
Grill the sausages then set aside
Fry the onion and garlic in a little oil
Then add the aubergine
Add 1 tsp dried parsley and season with salt and pepper
Butter or oil a roasting pan and add the vegetables
Cut up the sausages and add these to the vegetables
Add a little more oil to your pan and then fry the peppers
Then fry the diced pork in the same pan with a little extra salt
Add the pork and then add the pasta to the pan to incorporate the remaining flavours. Add this to the casserole
Give it a stir and then bake in the oven at 180ºC, 350ºF, Gas4 for 45 minutes
Serve with boiled new potatoes or salad. |
