Serves 2
2 duck breasts
3 tablespoons oil plus 1 tablespoon sesame oil
4 - 5 spring onions, chopped large
2 cm piece of ginger, grated
2 chopped cloves of garlic
1 red pepper and 1 green pepper all cut into strips
250 ml black bean sauce
Get the oil hot in a wok
Cut the duck into small strips and fry for 90 seconds
When fried, lift them out and set aside
Add the onions, garlic and ginger to the pan and fry for about a minute before adding the peppers
Continue to fry for 3 - 5 minutes
Stir in the sauce with 2 tablespoons of water
When bubbling, stir in the duck and serve with rice or noodles
