Cauliflower cheese and leek bake
For 4 - 6 people
Cauliflower and cheese is such a versatile dish, you can have it as a meal on its own or you can use it as an extra vegetable. It is particularly lovely with roast beef.
Start off with a larger finely chopped leek, and fried lightly in a good knob of butter
Leave it to cool
A small medium cauliflower cut into florets
Steam for about 6 minutes
Butter an oven proof dish
When steamed, places in the buttered dish
White sauce
600 ml milk heating in a pan
Beat 50 g flour into 50 g butter in a bowl - this is called a beurre Manié
As the milk is heating, stir the butter into the milk, stir in the butter / flour mix, this will thicken the sauce
Add a good pinch of white pepper some salt and a teaspoon of Dijon mustard
Use a balloon whisk to mix, and keep moving until thick and smooth
As it boils, turn the heat down to cook the flourr
Stir in 150 g Cheddar cheese
Sprinkle the leeks over the cauliflower's and then add the cheese sauce over the top
Mix together 50 g breadcrumbs with 50 g Lancashire cheese - any crumbly cheese
Sprinkle all over the cheese topping
Preheat the oven to 180ºC, 350ºF, Gas 4
Bake for 25 minutes
When cooked, let the dish cool a little for 5 minutes before serving
Serve in one of a million ways, as a veg, a dish, some salad, with bread…
