Three Cheese Quiche
Quiche has to be the most wonderful dish in the world. I personally can't get enough of it!
Grease and line a fluted loose bottomed fun tin.
300 g plain flour
1/2 teaspoon dry mustard powder
1/2 teaspoon black onion seeds
1/4 teaspoon salt and pepper
150 g lard (or 75 g lard, 75 g Butter)
100 g each of crumbled Lancashire cheese, grated Cheddar and Halloumi (or Feta at 50 g)
2 finely chopped Spring onion
3 eggs
180 ml milk
2 finely chopped spring onions
Combine the flour, mustard powder, onion seeds and a little salt and mix with the very cold fat which has been cubed and either mix in the food processor or rub in with the fingers.
Grease and line a 23 cm fluted baking tray with a loose bottom.
Line the tray with the pastry and place in the freezer for 20 - 30 minutes. You then needn't ake blind.
Create your custard with 180 ml milk and 3 whole eggs and beat together.
Layer the bottom of your quiche with chopped onion, then the crumbled Lancashire, then the grated Cheddar. Carefully add the custard and top with cubed Halloumi.
Bake at 190ºC, 375ºF, Gas 5 for 35 minutes.
When baked it should be slightly wobbly in the centre, but this continues to cook.
Remove the whole container to cool for ten minutes then remove the springform outer. Place this on cooling rack for 20 minutes then carefully remove the quiche from the base.
Allow to become completely cool before serving. |
