|
Salchichas means sausage. This particular type comes from Panama and is flavoured with chilies oregano, paprika and cumin, along with many other spices.
It is very easy to make, though there are a lot of ingredients.
150 g mushrooms - button
2 medium onions
3 - 4 cloves garlic
1 ½ tablespoons garlic
250 g bell peppers
250 g tomatoes
400 g tin cannelini beans
400 ml passata
1 aubergine
8 - 10 sausages
Stock to top up
Salt to taste
You need a large casserole for this, the type you can put on the cooker top and then into the oven.
Use a little oil and fry a Holy Trinity of Onion, Garlic and peppers, all chopped finely
Chop the tomatoes, aubergines and mushrooms (you can keep the mushrooms whole if you like.)
Add these to the onion mix
Dust the lot with paprika and stir well
Add the tomatoes and beans and then the passata
Keep on a simmer for five minutes and preheat the oven to 180ºC, 350ºF, Gas 4
Add the sausages and stir in, topping up with hot stock to cover everything
Bring to the boil and simmer for another five minutes and then place in the oven for 90 minutes.
Serve with couscous or rice |
