Description: Broccoli and Cauliflower soup is so easy to make and is full of flavour. The secret is in the roasting, you can enhance many a vegetable by simply roasting it. A really nice spring and summer soup for a lunch or starter course. To serve six people 1 small cauliflower 1 medium broccoli Oil for roasting. Place into a medium oven for 20 minutes and set aside Make a mirepoix Medium onion, 1 carrot Stick of celery 50 g butter 1 tsp thyme 2 tablespoons of fresh parsley Chop the vegetables and start to cook in butter with the herbs and add the lid on and cook for 8 minutes. Add the cauliflower and broccoli florets and cook for a good fifteen minutes together with the lid on. Add 1.2 litres of stock and bring to the boil. Add salt and pepper to taste. Simmer for 15 minutes Stir in 100 ml milk and 100 ml double cream You can thicken if you wish with flour pushed into some butter to thicken. (Called Burre mariné) Blend as much as you like.
