Chocolate loaf
If you are a lover of all things choc, this is a must for you, and makes for an easy sweet, a breakfast, an anytime snack! Give it a try!
Makes 1 loaf
400 g strong white flour
1 tsp salt
50 g cocoa
7g fast action yeast
50g soft brown sugar
50g melted butter
1 tsp vanilla extract
300 - 350 ml hot water
150g good quality chocolate chips
You need a 900g loaf tin, greased and lined so you can pull the loaf out easily
Sieve all together and stir in the 7g fast action yeast and the sugar
Melt in the butter and stir in the vanilla and mix into the flour mix
Use a spoon to mix between 280ml to 300ml of the water and then flour your hands and knead.
You will judge if there is need for more water, it should be sticky at first, but the water will be absorbed as you knead
Knead for at least 10 minutes
Roll into a rectangle and sprinkle with half the chocolate
Fold together into a ball and roll again to add the rest of the chocolate and repeat the process
Make into a sausage shape and then into the loaf tin
Leave for an hour to prove
Preheat the oven to 220ºC, 425ºF, Gas 7
Put the loaf into the oven and bake between 30 - 40 minutes
After 20 minutes turn the oven down to 190ºC, 375ºF, Gas 5 and leave for ten minutes before testing - doing the Thud method - it should sound hollow when hit on the bottom |
