Ragu Sauce
Olive oil for the pan
2 medium onions
3 garlic cloves
4 decent sized slices of fatty bacon
Fry together in medium hot oil
Cook 3 - 4 minutes
Then you need
350 g minced pork
300 g minced beef
1 tsp oregano
1 tsp parsley
1/2 tsp sat
Mix together in a bowl before putting into the pan
4 Add tbsp tomato puree mix with onion mix
Cook the meat until it changes colour then add 400 g chopped tomatoes and
200 ml strong red wine
Bring to a good simmer add a little grated nutmeg, check for salt, and lots of black pepper
Add 15 g fresh basil
Transfer to a casserole dish and cook in the oven for 90 minutes at 170ºC, 350ºF, Gas 3
Check for liquid and add stock as required. |
