Brown pickle is really easy to make and completely gorgeous.
You will need:
250 g carrots peeled and chopped small
1 medium swede peeled and chopped small
4 grated garlic cloves
6 g salt
2 tsp mustard seeds
2 tsp allspice
4 tablespoons lemon juice
500 ml malt vinegar
300 g dark brown sugar
125 g dates (or raisins) - chop the dates
2 onions
2 medium apples
Some gherkins or cucumbers or courgettes
Place into large pan under a low heat, stirring until the sugar has dissolved. Reduce the heat and have a gentle simmer for between 45 mins and 2 hours.
It is ready when the veg is cooked and thick and shiny.
Spoon into sterilised jars.
Keep for at least a week before using. |
