First of all, an apology. You'll find out why when you listen.
Today we look at two ingredients, peanut butter and mayo.
Peanut butter
250 g peanuts at a time in a food processor
1 tbsp honey
Pinch or two of salt
Simply whizz together into a smooth paste
Mayo
1 large egg or two egg yolks
2 tsp Dijon mustard
1 dessertspoon white wine vinegar
2 tsp lemon juice
250 ml light oil - sunflower or rapeseed
Pinch salt
Set in food processor and dribble the oil in while mixing.
Peanut butter muffins
2 eggs beaten into 250 ml milk at room temperature
Stir in 150 g melted butter
Sift 350 g Self Raising flour into a bowl and stir in 150 g Soft Brown Sugar
Mix in 150 g peanut butter
Beat the egg and milk mixture into the dry ingredients
Spoon into muffin cases and bake at 190 C 375 F Gas 5 for 25 minutes
When baked warm 2 tbsp syrup or honey in a pan and brush the tops of the muffins, then dip them into chopped peanuts |
