Cooking with herbs adds a whole array of flavours and we have a large number of herbs to choose from.
We talk herbs and have a couple of recipes - Pork and Apple Cottage Pie and Cheese and Herb pie.
Pork and Apple Cottage Pie
A chopped onion
A garlic clove, chopped
500 g lean minced pork
2 rashers of bacon
Salt and pepper to taste
1/2 tsp dried sage
1 large Bramley apple, cored and peeled
A little water or apple juice
2 tsp cornflour to thicken
1 Kg floury potatoes
Knob butter
Little milk or cream
1 tsp English mustard
Method
Fry the onion and garlic together under a low light
Add the minced pork and 2 chopped rashers of bacon
Salt and Pepper
Add the sage and mix in
Peel core and chop the apple and add to the mix.
Add a little water to cover.
Simmer for 30 minutes.
Step 8
Add a couple of teaspoons of cornflour to thicken
Use about 1 kg potatoes to make mash with butter and cream or milk. Add a teaspoon of English mustard
Put the meat mixture into an oven proof dish and layer the potato.
Bake at 200 C for 20 minutes.
Cheese and Herb Scones
Any cheese is usable, but strong Cheddar is our favourite.
300 g self raising flour
Level tsp mustard powder
Level tsp salt
150 g grated cheese
200 ml ordinary milk with 2 tsp lemon juice
1 tsp sunflower oil
Black pepper
2 Tbsp chopped parsley
Sift all the powdered ingredients
Stir in 100 g of the cheese and parsley
Make a well and add the milk
Mix with a fork to a dough
Don’t handle too much, you want this as light as possible
Transfer to a greased baking sheet, sprinkle with the rest of the cheese
Bake at 200 C for 20 minutes |
