Cheaper cuts of beef
Braising steak
Shoulder steak
Chuck or blade
Lean braising steak - upper rib
Stewing beef - neck, foreleg
Shin - lower leg
Skirt - thin rib, lower belly, often minced
Dearer cuts
Brisket
Oxtail (unfortunately)
More expensive still
Topside and Silverside - good roasting joints
Rump
Frying steak - good in stir fry
Very expensive
Fillet
Sirloin
Ribeye and T Bone
Bone in fore rib
Basically, the more work a muscle has to do the tougher it will become.
Fried chilli beef recipe
Cut 400 g lean frying steak into fine strips
Coat in seasoned flour and deep fry in a wok for 3 - 4 minutes
Remove the beef when crispy and allow to drain on kitchen paper
Remove most of the hot oil to a heatproof dish leaving 2 - 3 tbsp
Mix together
2 tbsp honey
3 tbsp sweet chilli sauce
2 tbsp soy sauce
80 ml water
1 tsp cornflour
In the oil in the wok fry 1 cm grated ginger, a chopped red chilli and 2 finely chopped spring onions for a couple of minutes and add the sauce mix
Stir in the beef mixture and serve with noodles |
