Victoria Sandwich, Chocolate cake, fruit cake, buns and cupcakes plus the various toppings you can make to go with them.
Victoria sandwich
To make Victoria sandwich you need equal amounts of flour, sugar and butter.
180 g self raising flour
180 g soft brown sugar
180 g butter at room temperature
2 large eggs
A dash of vanilla
Cream your butter and sugar.
Make sure the butter is at room temperature.
Add a splash of vanilla to your eggs.
Sift a tablespoon over the cream mixture.
Add the eggs and beat in, then sift in the flour.
Use 2 18cm cake tins, greased and lined.
Divide the mixture into the two tins, spreading from the centre outwards.
Bake at 180 C Gas 4 375 F for 20 minutes.
For a chocolate version use 20 g coco powder instead of 20 g of 20 g of the flour.
Farmhouse Fruit cake
100 g butter and sugar creamed
200 g Self raising flour with 1/2 tsp each of mixed spice and cinnamon.
20 g ground almonds.
Mix everything together and add the zest of a lemon.
Sift a tablespoon of flour and then add 3 eggs.
Add the rest of the flour and the zest of a lemon.
Add 4 tablespoons of milk.
25 g each of currants and sultanas and 50 g raisins.
Wish everything together.
Put into 18 cm cake tin, set the oven to 180C, Gas 4, 375 F and bake for 90 mins. |
