We are having guests! one of them is vegetarian so this themed menu is perfect for presenting both vege and meat dishes, as well as being interesting in itself.
Harissa Chicken
You need to make a harissa sauce. You can buy it, but for me it is always too strong. To make a marinade for 6 people you need
200 g chillies (see later)
1 tsp cumin seeds
1 tsp coriander seeds
4 garlic cloves
2 tbsp olive oil
juice of 1 lemon
Toast the seeds and chop everything else - except the lemon juice - it won't chop.
Add everything to a blender and whizz
The chicken is cut into 1 inch pieces and marinated overnight.
I'm going to bake on skewers.
Haloumi and mushroom kebabs
We spoke of halloumi (Is it 1 L or 2?) last week.
This is simply a skewered halloumi, mushroom and vegetable kebab, grilled. Really easy.
Courgette and Halloumi fritata
You need to use the Holy Trinity - onions, celery and red pepper, chopped fine and fried in oil and butter slowly until the onions are translucent.
Grate a courgette and remove the water with a clean towel, add to the Holy Trinity and cook for 10 minutes.
Beat 6 eggs and season with salt and pepper, add to the mixture, stirring in a little but not too much.
As the eggs start to set, add the halloumi pieces and grill until all is cooked.
Harissa broccoli and cauliflower
This is easy, simply cut small florets and dip liberally in the remains of the harissa. Bake on a tray at 180 C, 350 F, Gas 4 until soft and a little browning.
Pepe e Patatas
Yes, it's Italian, not Levantine, but who cares?
Pepe e patate resembles a ratatouille, but is actually quite different. This is a seriously tasty and inexpensive dish, that feeds 4 until they are stuffed and smiling.
I found this on Youtube, an Italian lady from Australia sharing her recipes from Calabria. It is a Cucina Pauvre recipe, which means poor persons kitchen, which forms the basis of Italian food!

2 - 3 capsicums
4 medium potatoes
4 - 6 large tomatoes
3 cloves of garlic
olive oil
A little basil if you like it
Peel and thinly slice the potatoes dry them on a tea towel Slice the peppers into strips
Chop the tomatoes and finely chop the garlic
You need a large frying pan, cover the base with oil and fry the potatoes
When golden, remove and set aside
Fry the peppers until they start to caramelize, then remove and set aside
Fry the tomatoes with the garlic, then return the peppers and potatoes to the pan and season with salt and pepper
Serve with crusty bread or any meat or fish you prefer
This dish is really cheap – especially if you grow your own potatoes, tomatoes and peppers, you can have a really hearty meal for almost nothing. And even if you buy the ingredients, you have a hearty meal for less than £1.00 a serving, and it really is excellent food. |
