For us, Friday night was always something special, we always had a special tea - which was essentially a buffet full of the things we loved to graze on.
So these are some buffet ideas your family and friends will really enjoy.
Anchoiade is a dip which also doubles up as a salad.
1 clove of garlic
50 g anchovies (keep a quarter back for the salad)
2 tablespoons olive oil
1 tablespoon white wine vinegar
Blast together in a food processor.
To make the salad simply arrange your favourite salady things on a large oval platter and pour the dressing over.
Chicken liver pate
100 g breadcrumbs
400 g chicken livers
150 g butter (keep 50 g for the seal)
1 large chopped onion
3 chopped garlic cloves
75 ml brandy
Cook the chopped livers in the butter and the other ingredients.
Transfer to a food processor and make a smooth paste
Melt the remaining butter
Transfer the pate to sterile containers
Cover with the butter to seal.
Gravadlax
Cured salmon - gorgeous
1 500 g fillet of salmon
40 g sea salt
40 g light brown sugar
Juice and zest of a lemon
1 tsp crushed black pepper
Handful chopped dill, and of parsley
25 ml white wine
25 ml white wine vinegar
Make a marinade out of all the ingredients and pour over the fish. Keep for 4 days to cure in the fridge. |
