Burgers are great - especially if you make your own. There are hundreds of burger recipes, here are a few we make at home.
Basic burger
800 g minced steak
1 onion, finely chopped, fried gently and allowed to cool
80 - 150 g breadcrumbs or rusk
1 tsp salt
Up to 1/2 tsp white pepper
2 tbsp tomato puree
Mix all together and form into pattes
Stilton burger
500 g beef
125 g blue Stilton
125 ml port
100 g breadcrumbs
1 large spring onion, finely chopped
Salt and pepper - but not too much the cheese is salty
Pork burgers
500 g pork mince (good quality)
1 level tsp salt and pepper
50 g breadcrumbs
1 tsp chopped sage leaves
Chinese style
500 g pork mince
2 garlic cloves
2 tbsp soy sauce
3 tbsp hoy sin sauce
1/2 tsp 5 spice
2 - 3 tsp sesame oil
Spanish burger
500 g pork mince
50 g breadcrumbs
2 level tsp paprika
1 small finely chopped onion
8 - 10 green olives, chopped
2 tbsp tomato puree
Kebab meat
500 g lamb mince
150 g breadcrumbs
1 tsp dried oregano
1/2 tsp each of dried thyme, onion powder, garlic powder
1 tsp salt
1/4 - 1/2 tsp cayenne pepper
1 tsp plain flour
Heat oven to 180 C, 350 F, Gas 4
Combine everything into a bowl, pound the ingredients
Cook for 75 minutes
Cool for at least 10 minutes before slicing. |
