In this podcast we are talking about blackberries, making jam, blackberry fool, Blackberry Amber, Blackberry wine and a special blackberry sauce for venison.
Blackberries are amazing! Amazingly painful when they scratch you in the garden, and at least they give great fruit!
Blackberry and Apple Amber
1 large Bramley, peeled, cored and chopped
200 g blackberries
2 tablespoons caster sugar
4 tablespoons water
50 g fresh breadcrumbs
2 large eggs
150 ml milk
Preheat the oven to 170 C, 325 F, Gas 3
Stew the apples and blackberries together with the water and sugar for 10 minutes until the fruit begins to fall
Add the breadcrumbs
Whisk the breadcrumbs and egg together
Transfer the mixture to a buttered oven proof dish and bake for 35 - 40 minutes
Blackberry Fool
350 g blackberries
200 ml double cream
150 ml Greek yoghurt
100 g soft brown caster sugar
Cook the fruit with the sugar and 2 tablespoons of water for about 8 minutes until it falls
Whip the double cream until peaks form and fold in the fruit and yoghurt
Spoon into glasses and chill for a couple of hours |
