Rice
Continuing with our themes of staples, long grain rice is one of the most wonderful ingredients, a must for every store cupboard.
Pepper, bean and rice salad
For 2
150 g long grain rice
400 g can red kidney beans
2 ripe tomatoes
1 clove of garlic, chopped
2 tablespoons honey
2 tablespoons lemon juice
1 tablespoon vegetable oil
Salt and pepper
2 tablespoons parsley chopped
1/2 teaspoon dried oregano
Chop all the vegetables finely
Combine the honey, lemon, oil and garlic, parsley and oregano
pour over the tomatoes and season with salt and pepper
Stir in the rice
Tuna and rice salad
For 2
1 can tuna in oil
150 g cooked rice
8 cm piece of cucumber, chopped
2 chopped spring onions
1 tablespoons soy sauce
2 tablespoons lemon juice
2 tablespoons vegetable oil
2 tablespoons fresh chopped parsley
Salt and pepper
2 tablespoons cooked sweetcorn
Simply mix the lot!
To keep the rice safe to eat keep the salads in the fridge and consume within 2 days
Rice Pudding
800 ml whole milk
200 ml single cream
OR 600 ml whole milk and 400 ml evaporated milk
120 g long grain rice
30 g caster sugar
20 g butter
Heat the milk with the cream in a large saucepan until just boiling
Turn the heat down to a simmer
Stir in the rice
Simmer for 20 minutes
Stir in the sugar and butter
You can...
Butter an oven proof dish, pour the mix into it and cover with foil. Bale at 160 C, 300 F, Gas 2 for 90 minutes.
Or you can...
Keep on a simmer with a lid on the pan for 60 minutes
After 40 mins, check for liquid level and add more if you think you need to
Towards the end of the cooking, you can add 50 g raisins or 1/2 tsp cinnamon |
