This is a wonderful dish, an absolute must for mixing sausage and fish - the flavours compliment each other so well.
2 tablespoons oil
1 onion, finely chopped
180g chorizi, finely chopped
500 ml can passata
1/3 teaspoon oregano
400 g can butter beans
2 tablespoons fresh parsley
4 to 8 pieces of white fish of your choice (about 400g in total)
Heat the oil and cook the onion and chorizo in a large based pan for 3 minutes
Stir in the passata and oregano and simmer for 5 minutes
Stir in the drained beans and parsley and cook for 10 to 15 minutes
Add the fish pieces and cook for a further 10 minutes on a low light. |
