Description: This originally had no name, but listen and you will find out how it is now called Lord Kelvin's Bake. Needless to say, Diana didn't know who Lord Kelvin actually is! It's a kind of layered ratatouille / Dauphinoise sort of thing, but very tasty! 1 ONion 1 Red pepper 1 Courgette 4 ripe tomatoes 2 cloves garlic 1 tsp dried parsley 1/2 tsp Oregano 2 tablespoons of grated parmesan 100g - 150 g mature cheddar, grated 150 ml double (heavy) cream Slice the potatoes thinly and par boil for 3 minutes, set aside to cool. 1 Butter an ovenproof dish 2 Heat 2 tablespoons oil and fry the onions, pepper, courgette, garlic and whatever else you want to add 3 Stir in the herbs and tomato from the can 4 Spoon 1/3 mixture in the dish, then 1/3 potato 5 Sprinkle with parmesan cheese 6 Another layer of veg and potatoes, and then another 7 Top with grated cheese and then pour over the cream 8 Bake in the oven at 190C, 375 F, Gas 6 or 463 Kelvin!!!!
