Description: This can also be made with ripe tomatoes. Chop or process the following: 1.5 kg green tomatoes 1 large onion 2 Bramley apples, peeled and cored Other ingredients 350 g soft brown sugar 1 tsp salt 1/2 to 1 tsp each of allspice and ground cinnamon Enough vinegar to cover the vegetables plus 1 cm over Put all into a large pan and heat on a low light to dissolve the sugar Then bring to the boil and then reduce heat to a slow simmer Cook for about 1 to 1.5 hours It is ready when it is glossy, thick with a little liquid Allow to cool a little and transfer to sterilised jars. Will keep in a cool dark place for 12 months, 1 month after opening if kept in the fridge. Don't forget the label!
