Vanilla Cupcakes
These are gorgeous! Made all over the world, they have become really popular - especially in coffee shops!
Cupcakes are called cup cakes because they are made in little cups.
This makes about 15 cupcakes
You will need:
200 g butter, golden caster sugar and self raising flour
Butter should be soft
Mix the butter and sugar should be beaten together
You need 3 eggs and 3 tablespoons of milk and 1 teaspoon of vanilla extract
Whisk the extract into the butter and sugar
Sift a few tablespoons of flour into the mix and beat in, with the eggs
You can add the milk at this time too
Add the rest of the flour, whisking all the time
You should have a soft mixture but not runny
Preheat the oven to 175 C, 325 F, Gas3
Add a spoonful of mixture to each case
Bake for 18 - 20 minutes, ready when they spring back on gentle cooking
Cool in the tin first, then remove them once cool, and then allow them to cool completely
For the buttercream:
Simply 200g sugar, 100g butter and a teaspoon of vanilla. Whisk together and apply! |
