Turkish Style Beef Casserole
This is a tagine without being a tagine. There are lots of ingredients!
2 medium sized onions
1 large carrot
80 g green beans
Chop the vegetables
2 - 3 cloves of garlic
1 red chilli
1 bell pepper
50 g raisins or dried apricots
1/2 preserved lemon, chopped
1 tsp cumin
1 tsp cinnamon
2 tsp sugar
1/2 tsp oregano
1 tsp parsley
400 can tomatoes
80 g red lentils
700 g casserole beef
1 dessertspoon of flour
Fry the vegetables together in a little oil
Add the pepper and garlic
Sprinkle the raisins over the top, and the chopped preserved lemon
Stir in the tomatoes and fill the can with water and pour in
Add the spices and then the lentils
Pop into a casserole dish with a lid
Heat the oven to 160C, 325F, Gas 3
In the frying pan add a little oil and the meat, sprinkle the meat with flour
Pop the meat into the vegetable mix
Sprinkle 2 tsp of brown sugar and stir in
Bake for 2 hours. If you like to you can turn the oven down to 150C, 300F, Gas 2 for the last hour, but be sure the beef is succulent and not tough |
