So it has come to that time when we need sustenance, warm, comforting and tasty sustenance. This Autumn Pie (Somehow Fall Pie doesn't quite describe it) is all of the above.
You will need
1 large onion
2 medium carrots
1 leek
1/2 small Swede
1 garlic clove
500 g minced beef
Dash of Worcestershire Sauce
300 ml stock
1 tablespoon tomato puree
Salt and pepper
1/2 teaspoon ground cinnamon
750 g potatoes
250 g pumpkin flesh
25 g butter
A large grating of nutmeg
Chop the vegetables small and cook slowly in a mixture of oil and butter
Add the beef and cook through then add the tomato, cinnamon, stock and salt and pepper
Simmer for 50 mins
Place the peeled potatoes to boil and put the cubed pumpkin flesh in the oven at 180C, 350 F, Gas 4 - bake for 20 minutes or so
Mash together the potatoes, butter, nutmeg and a little salt and pepper for your topping
Transfer the meat to an oven proof dish and layer the potato mash on top
You can top with a little cheese if you like
Bake at 190 C, 375 F, Gas 5 for 35 - 40 minutes
