Brigade Pudding
Brigade pudding is a fruit based suet pudding from the Second World War, and is just as tasty now as it was then - only we have different cooking methods available to us these days, microwaving instead of steaming. However, this is a steamed recipe.
250 g self raising flour
Pinch of salt
125 g vegetarian suet
Grated zest of 1/2 lemon
Cold water to bind
Sift the flour into a bowl with the salt
Stir in the zest and the suet
mix with 7 - 8 tablespoons of cold water to make a ball
For the filling
2 brambly apples, peeled and cored to about 350 g chopped
Juice of 1/2 lemon
100 g raisins
50 g sultanas
3 tablespoons golden syrup
Mix everything together in a bowl
Line a pudding basin with butter and then roll our 2/3 the pastry and line
Spoon in the fruit mixture
Make a lid with the rest of the pastry
Seal the pastry by pinching, then cover with baking paper and then foil.
Make a handle with string and steam on a trivet over boiling water for 2 1/2 hours, topping up from time to time with more boiling water. |
