Date and Pecan Cake is simply wonderful! A sweet and moist cake really worth the effort!
You will need
89 g dates, chopped and soaked in boiling water
180 g softened butter
150 g Soft Brown Sugar
1 tablespoon Golden syrup
200 g Self Raising flour
3 eggs beaten
75 g pecans - keep 8 back and crush the rest
Grease and line a baking tin
Preheat the oven to 180 C, 350 F, Gas 4
For the top:
3 tablespoons Maple syrup
1 tablespoon soft brown sugar
Cream together the butter, sugar and syrup
Sift in 1/2 the flour and add 3 beaten egga, beat together well
Add the rest of the flour and fold in
Fold in the soaked dates and the crushed pecans
Add 3 tablespoons of the liquor
Spoon into the greased lined cake tin and bake for 50 - 55 minutes
When cooled:
Spoon the maple syrup over the top and sprinkle with a tablespoon of soft brown sugar |
