Sausage Casserole

There are few things more warming and comforting that a sausage casserole, and what’s great about it is you can put in anything you like.
In this podcast the evidence was consumed last night.
Serves 4
12 thick sausages cut up into 5 pieces each
2 tablespoons honey
1 large chopped onion
1 red and 1 yellow pepper , chopped
2 large garlic cloves, chopped
1/2 teaspoon dried thyme
1 teaspoon parsley
1/2 teaspoon smoked paprika
1 500 ml carton passata
Heat 2 tablespoon oil in a pan
Fry the onion, pepper, garlic until tender
Place into a lidded container for the oven
Fry the sausage in the same pan
Drizzle the honey over the sausage
Once fried and brown, drain most of the fat away into a container add to the vegetables in the ovenproof dish and stir in the herbs and paprika
In the frying pan, add the pasta and heat to almost boiling, stirring in the flavour from the base and sausage cooking
Add the pasta to the ovenproof dish
Stir well, cover and bake at 180 C, 350F, Gas 4 for an hour. |
