Lemon Streusel Tray Bake

Is it a cake, is it a biscuit, is it a crumble? Who knows? It’s up to you!
It’s basically a layered spongy, lemony, crumbly bake, a cake with attitude.
For the lower level:
Cream together:
120 g butter
100 g soft brown sugar
Sift into this:
150 g self raising flour and fold in.
Then spoon into he greased baking tray (22 cm)
Bake this for 15 minutes at 180 C, 350 F, Gas 4
When cool:
Spoon a layer of lemon curd over the top (5 tablespoons)
For the topping:
150 g plain flour and 1/2 teaspoon baking powder
120 g
80 g soft brown sugar
25 g chopped nuts
Rub the butter into the flour and stir in the other ingredients,
Add 20 g oats for a more crumbly top
Add the zest of a lemon.
Bake for 25 - 30 minutes at 180 C, 350 F, Gas 4 until the top is golden |
