Dried Apricot Jam

When you need apricot jam, like in December when you use it as a glue for cakes and stuff, apricots are out of season, but you can make your own with the dried variety.
You will need
1 Kg dried apricots
Boiling water
Juice of 2 lemons
2 Kg sugar
Put the apricots in a bowl and cover with boiling water to 1 cm above the fruit
Leave for 4 hours
Pour the fruit and liquid into a large pan with the lemon juice and bring to the boil
Simmer for 110 to 15 minutes to soften the fruit
Remove from the heat and stir in the sugar, stirring under a low heat until all the sugar is dissolved
Bring to the boil with high heat and stir, this can take 5 t0 6 minutes
Test for a setting point, drip some jam on a cold saucer and push it. If it wrinkles and stays wrinkled, it is ready - if not return to the heat for two more minutes
When a setting point is reached, take off the heat and leave to stand for 5 minutes
Stir the jam and ladle into sterile jars using a jam funnel and seal straight away
When cool, label with the type of jam and the date it was made |
