INGREDIENTS
1 tsp dried yeast
½ tsp sugar
Or 1x7g sachet fast action yeast
180 ml warm milk
30g melted butter
300g bread flour
½ tsp salt
2tbsp golden caster sugar
1 egg, beaten
5-6tbsp mincemeat
2 tbsp clear honey for drizzling over the top
METHOD
1. Mix the dried yeast with the sugar and warm milk and leave in a warm place to froth up. This usually takes between 10-15 minutes. If using fast action yeast stir this into your flour.
2. Sieve the flour and salt together into a mixing bowl and stir in the yeast or yeast mixture and sugar. Then add the melted butter and beaten egg. Stir everything together well.
3. Knead the mixture – add a bit of flour if the mixture is too sticky. Knead for 10 minutes until the dough is smooth.
4. Cover the dough and prove for 40 minutes – hopefully it has doubled in size.
5. Lightly flour the working surface and roll the dough out to a rectangle.
6. Spread the mincemeat over the surface of the dough.
7. Starting with the longest edge roll the dough carefully into a long sausage, tucking the open side underneath when complete.
8. Cut the roll into 8 slices and put them flat down into a greased flan dish or tray tin. Leave to proof for another 20-30 minutes. Preheat the oven to 200C/gas6/400F
9. Put in the oven and cook for 20-25 minutes or until golden brown, brush the tops with honey. |
