Cherry Tiffin Bites

These are so gorgeous you will have difficulty keeping them for any length of time, they are temptation personified!
You will need:
100 g chopped dates
150 g digestive biscuits
24 glace cherries
3 tbsp cherry brandy
300 g chocolate
40 g buter
1 dessert spoon Golden Syrup
Silicone baking tray with 24 compartments
Soak the dates in boiling water for 5 minutes and allow to drain
Soak the cherries in the cherry brandy
Chop the dates and place in a bowl with the biscuits and crush together
Melt the chocolate, butter and syrup together over a pan of hot water - not on the heat.
When melted, stir slowly to mix and then mix into the biscuit combination.
Keep warm.
In the tray, spoon a teaspoon of the mix into each compartment and then push a cherry in each. Top up with another spoonful of chocolate mix and smooth over with a spoon.
Place in the fridge for at least 2 hours. |
