Roast Dinner Soup

It’s not often you have roast dinner leftover - well not in our house anyway, but when you do here is an excellent alternative to bubble and squeak!
Start by sweating together over a low light in a little butter, 1 onion, 1 - 2 leeks, 2 carrots chopped into small cubes.
Put the roast potatoes on a tray coated with a little oil and place in the oven at 180 C, 350 F, Gas 4 to crisp up a little.
To the sweated vegetables add:
Your left over veg
1.2 litres of stock
80 g lentils
1 teaspoon of parsley
Left over gravy
Any left over meat
Bring to the boil and turn down the heat to simmer for 10 minutes.
Blitz with a hand blender.
Serve with the roast potato croutons! |
