Lemon Flummery
This is a remarkable dessert, often made at Christmas, in that it is made from cereal, but looks as though it was a really posh blancmange!
You will need 80 g oatmeal, soaked for 24 hours in water.
Juice and zest of 2 lemons.
60 - 80 g caster sugar
150 ml double (heavy) cream.
2 tablespoons of honey.
2 tablespoons whiskey.
Strain the oats and soak again in 1 litre fresh water, left overnight.
Stir the mixture well then strain the liquid into a pan.
Add the lemon juice, zest and sugar, stir and bring to the boil.
Keep boiling until very thick, about 8 - 20 minutes.
Cool for 10 minutes then stir in the honey and whiskey and cream.
Pour into a large serving bowl and leave in the fridge once cool to go cold and set.
Serve with fruit |
