Chicken one pot stew

Description: This is one of those very forgiving dishes that I make often and it depends what I've got in my fridge or me freezer but I must say that this goes really well together, these ingredients, because they're simple, and there aren't that many of them. You will need: 6 - 8 chicken thighs boned 1/2 teaspoon each of oregano, parsley and cumin 1 tablespoon of vegetable oil Just mix all those seasonings together, no salt or pepper Cut your chicken thighs up into smallish pieces, really quite small pieces and then pop them into a bowl and sprinkle your oily spicy mix over the pieces and massage it all in. Leave it to one side until you’re ready. You need a nice large onion, three garlic cloves all chopped very finely and also you'll need three tablespoons of tomato puree plus 150 ml of white wine all mixed together. If you haven't got white wine use 150 ml of water. You'll also need about 100 grams of green beans In a pan melt together two tablespoons of oil and a knob of butter and fry your onion in your garlic together until they are quite translucent. Add your chicken pieces and sear the outside of all the pieces. Put your green beans in and then add your white wine. Bring it to a simmer add some salt and pepper stir it all together put your lid on your pan and let it come to the boil. Turn the heat right down to us low simmer for about 45 - 50 minutes, your chicken needs to be well cooked and tender and if they are cut into small pieces it won’t take long! The sauce won't be too thick, obviously you won't have so much but you'll have quite a bit coming out of your chicken as it cooks. When it's cooking and it's simmering together just just leave it with the lid on. Stir it occasionally, let's say, for about 50 minutes. If you wish you can add some fresh parsley you can add some black olives.
