Cauliflower cheese bake

You need
1 medium sized cauliflower
40 g butter
40 g plain flour
200 g cheese (150 g Cheddar, 50 g red Leicester)
1/4 teaspoon white pepper
1/2 teaspoon mustard powder
1 slice of bread, grated to make breadcrumbs
25 g porridge oats
1 teaspoon of paprika
Salt
Break into florets, making them all of a similar size.
Steam them for about 8 - 9 minutes until the stems are just tough.
Place into a buttered ovenproof dish.
400 ml milk
For the roux
Melt the butter and sprinkle the flour mixing with a wooden spoon on a low light.
Add the mustard and pepper.
Cook out the flour for a few seconds.
Slowly add the milk whisking (change to a whisk) as you go. (Room temperature)
All the milk will thicken, keep the light low.
Cook for 30 seconds to finish cooking the flour.
Put 2/3 the Cheddar and 1/2 the red Leicester into the roux and mix well.
Combine the oats, paprika, a pinch of salt and the breadcrumbs.
Pour the cheese roux over the cauliflower, and sprinkle with the remaining cheese and then the breadcrumb mix.
Bake at 190ºC, 375ºF, Gas 5 for about 15 minutes.
