Description: Vanilla Cupcakes The addition of a little golden syrup adds depth of flavour to your cakes. Makes about 15 cakes. For the cakes: 180g very soft butter, keep it at room temperature for a few hours 1 tsp vanilla extract 165g soft brown sugar 1 dessert spoon golden syrup 3 eggs, beaten together 180g self-raising sing flour For the buttercream: 100g soft butter 1 tsp vanilla extract 2 tsp golden syrup 200g icing sugar •Place cupcake cases in two 12 holed tins. Preheat the oven to 170C/325F/gas 3. •To make the cakes, place the butter, vanilla and syrup in a mixing bowl and cream together. •Add the sugar and beat again until the mixture is soft and fluffy. •Sift in a third of the flour over the butter mixture and add the eggs. Beat vigorously until all the mixture is combined. •Fold in the rest of the flour with a metal spoon. •Put a heaped teaspoon of the mixture into each paper case. No need to smooth out the top. •Place in the oven and bake for about 15 minutes. They should be golden brown, well risen and springy to the touch. •Place on a cooling rack and allow to go completely cold. To make the buttercream: •Place the butter, vanilla and syrup in a bowl and beat until soft and fluffy. •Sift in half of the icing sugar and beat together. •Add the rest of the icing sugar and beat again. To finish the cakes: Use a pointed knife and cut a disc out of the top of each cake and put a teaspoon of the buttercream in the hole. Place the sponge disc on the top and press lightly. Dust with a little icing sugar to finish.
