Mushroom and mascarpone spaghetti
This stems from the fact that we made a load of mascarpone.
For two people
You will need:
15 g butter
2 cloves of chopped garlic
2 shallots, chopped
200 g chestnut mushrooms
100 ml dry white wine
100 g mascarpone
Salt and pepper
Teaspoon parsley, chopped
Teaspoon thyme
30 g parmesan
Let the garlic and shallots cook for 3 mins
Add the mushrooms (halved) and coo for about 4 minutes on a medium light
Stir in 100 ml dry white wine and cook a few minutes then add the mascarpone
Stir in and add the parsley and thyme
Top with the parmesan and serve.
If you want to make your own pasta
330 g plain flour
3 eggs
1/2 teaspoon salt
Sift 300 g of the flour and salt into a bowl
Make a well and break the eggs in the flour and mix with your fingers
Roll into a ball and leave to rest for a few minutes
Roll out as thinly as you can and cut into tagliatelle - ribbons or any shape you like |
