Dundee cake is a traditional fruitcake with lots of orange. Absolutely lovely with a cup of tea, perhaps, if you like it, with a little butter. Winston Churchill’s favourite cake!
You will need
200 g Soft Brown sugar
150 g Plain Flour mixed with 100 g Self Raising Flour
5 eggs
100 g glace cherries
3 tablespoons orange marmalade
100 g ground almonds
Zest and juice of a small orange
80 g blanches almonds - soak in boiling water and remove the skins to blanch them
Put the fruit, orange zest and juice and ground almonds in a basin and mix with 3 tablespoons of flour.
Preheat the oven to 170ºC, 325ºF, Gas 3
Grease and line a deep 20 cm loose bottomed tin
Cream together butter and sugar and add the marmalade an cream again
Add half the flour and the eggs and beat in vigorously
Fold in the rest of the flour and then the fruit
Spoon the mixture into the tin and smooth out flat
Place whole almonds on the top in concentric circles
Place in the oven and reduce the temperature to 150ºc, 275ºF, Gas 2 and bake for 75 minutes then turn down to 140ºC, 250ºF, Gas 2 for another 40 minutes
Test with a skewer, it should come out clean
Allow to cool for 30 minutes, remove from the tin, then leave for another 30 minutes before carefully removing the paper |
