Description: Pork and pickle lattice pie A pork pie with extras. The lattice makes it really light - for a pork pie. You will need a roasting tin 500 g plain flour 1 level teaspoon salt Pinch of pepper Level teaspoon mustard powder 250 g Lard (cubed) Water Sift the dry ingredients together and then rub in the lard. Use water to turn it into a dough. Put the pastry in the fridge for 30 mins 1 kilo minced pork 1 level teaspoon salt 1/4 teaspoon white pepper 5 tablespoons brown pickle Mix together and pop into the fridge while you: Roll out 2/3 your pastry and press into the larded dish. Press half the pork mixture on top. Dot the pickle around this layer. Add the pickle in dots around the pie. Roll out the lid and cut out the strips. Use the strips to make the lattice top. Cook in an oven at 180ºC, 350ºF, Gas 4 for about 60 minutes Use a thermometer to check for cooking. You can wash with an egg if you like. Allow the pie to cool completely before serving.
