This is a wonderfully substantial cake with all kinds of variations and changes. If you can make this kind of cheese cake, you can make anything - but it is really simple.
Ingredients
200 g butter
250 g Ricotta
1 1/5 tsp vanilla or almond extract
250 g soft brown sugar
2 eggs
200 g self raising flour
200 g ground almonds
Mix the butter, sugar, riotta
Sift together the flour
Beat the eggs
Sift the flour again into the mixture. Firstly 2 - 3 tablespoons and then ad the eggs, then the rest
Add the almonds with a couple of tablespoons of milk
Heat the oven to 160ºC, 300ºF, Gas 2 1/2
Grease and line a 23 cm springform tin.
Spoon the cake mix into the tin, make a dint in the centre to give a flat top.
Cook for 60 minutes, check with a skewer - it should come out clean.
Remove when bakes, leave to cool for ten minutes and leave to cool. Remove the paper and base - be careful, and place on a cooling rack to cool completely.
Top with icing and glace cherries, but you can top with fruit, cream, slice, add syrup, cherry brandy - anything you like really! |
