Macaroons
These are the traditional macaroons, not the brightly coloured type that are so difficult to make.
You will need:
120 g soft brown sugar
2 teaspoons cornflour
1 tablespoon icing sugar
100 g ground almonds
2 medium egg whites
1 teaspoon almond extract
Flaked almonds to decorate
How to do it
Sift the cornflour and icing sugar together
Put the soft brown sugar and almond into a mixing bowl
Whisk the egg whites with the almond extract until they have doubled in size, but haven't formed peaks
Fold in the whites into the sugar and almond mix spoonful by spoonful
Place a piece of baking parchment on a baking tray and spoon a dessert spoon of the mixture with space between them
Add your almond flake to the top
Bake for 15 - 20 minutes at 180ºC, 350ºF, Gas 4
To make coconut macaroons, the weights are the same, adding grated coconut instead of the almond |
