On this episode I welcome my good friend, and one of the most talented upcoming chefs in Spain, Coco Montes (@coco.montes) to the first conversation episode of the season. We talk about what it takes to earn a Michelin Star, the secretive process behind the evaluation, Coco's philosophy on the world of restaurants and hospitality, and more. Coco isn't just a great chef, he's also a great example of how having a non-native accent, but being a high level English speaker works beautifully. His comfort within the language and natural communication style really allows him to get his ideas across and be himself. He's not concerned with pronunciation or going out of his way to sound more "native". He speaks calmly and chooses his words carefully. I think there's really something to that.
