The FDA estimates that 30 people die each year from eating Salmonella contaminated eggs. Salmonella can be found in the reproductive organs of some hens. Things like age, stress levels, vaccinations, and even the diet of a hen can affect Salmonella risk. You can prevent Salmonella contamination by pasteurizing the eggs. If you have cancer, HIV, diabetes, or a have had an organ transplant, you are at a higher risk for developing foodborne illnesses. Talk to your doctor if you develop a fever, abdominal cramps, vomiting, or diarrhea after consuming raw eggs.
